The project
Continuing the cultural exchanges between Marseille and Africa initiated several years ago, the Compagnie Fruitière Foundation is experimenting a new culinary exchange program. The aim is to promote the transmission of knowledge and know-how, the sharing of food traditions and cultural discovery through gastronomy.
Carried out in partnership with chef Sébastien Richard (Association La Petite Lili, solidarity restaurant Le République), Les Grandes Tables de la Friche and Les Cuisines Africaines, the pilot project was launched in spring 2024. The Fundation welcomed to Marseille chef Sandrine Nkou Ebogo from Cameroon, one of the four countries where the Compagnie Fruitière Group operates.

At the head of the restaurant at the National Museum of Yaoundé for five years, Sandrine Nkou Ebogo manages a team of 9 employees, whom she trains herself. She regularly takes on internships with disadvantaged women and widows and supports street children. Sandrine dreams of founding a cooking school for women in Nanga Eboko, a town in the center of the country where she comes from.
This 3-week residency allowed the chef to learn, collaborate and interact with the ecosystem of culinary players in Marseille.
Among the highlights of the residency:
- Closing dinner of the La 1ère Outre-Mer Festival, orchestrated by Les Grandes Tables at Friche la Belle de Mai, for 350 guests.
- Four-handed lunch with Sébastien Richard at the Le République restaurant.
- Meeting with chefs Gérald Passédat (Le Petit Nice) and Nadia Sammut (La Fenière).
- Discovery of plant-based pastry at the Oh Faon production laboratory in Marseille with pastry chef Jérôme Raffaelli
- Walk with chef Sébastien Cortez in the Provençal hills around Gémenos to discover edible flowers and aromatic herbs
- Preparation of a Cameroonian-inspired meal for employees at the Compagnie Fruitière headquarters.
